Ingredients
For the rice:

Whole spices:
â 1 bay leaf
â 1 black cardamom
â 2 green cardamoms
â 4-5 black peppercorns
â 1-inch cinnamon stick

Method
Step 1: Prepare the base
1. Heat oil or ghee in a heavy-bottomed pan or pressure cooker.
2. Add the whole spices: bay leaf, cardamoms, cloves, cinnamon, black peppercorns, and cumin seeds. Let them splutter.
3. Add sliced onions and sauté until golden brown.
Step 2: Add the aromatics and spices
4. Add the ginger-garlic paste and green chili. Sauté for a minute until the raw smell goes away.
5. Mix in the chopped tomatoes and cook until soft and mushy.
6. Add turmeric, red chili powder, coriander powder, and salt. Stir well to combine.
